IngredientsFor the Chicken: 1 whole chicken, spatchcocked Jack Daniel’s Original BBQ Rub Butcher BBQ’s Sweet Chipotle Rub 250g melted butter For the Alabama White Sauce: 1 ½ cups mayo 2 tbsp apple cider vinegar 2 tsp Worcestershire sauce 1 tbsp horseradish 1 tsp mustard 1 tsp each: white pepper, black pepper, kosher salt ½ tsp each: garlic powder, onion powder, cayenne Juice of ½ a lemon |
Method
Step 1: Preheat the Smoker
Set the smoker to 107–121°C (225–250°F). Apple or Cherry wood adds a hint of sweetness, while hickory brings a stronger smoky flavour.
Step 2: Prep the Chicken
Lay the chicken breast-side down and cut along both sides of the backbone with kitchen shears. Remove it and press down on the breastbone until the chicken lays flat.
Step 3: Season Generously
Coat the entire bird with Jack Daniel’s Original BBQ Rub and Butcher BBQ’s Sweet Chipotle Rub. Let it sit for 20 minutes to let the seasoning settle in.
Step 4: Smoke the Chicken
Place the chicken on the smoker, skin-side up. Smoke for 2–3 hours, basting with melted butter every hour for extra flavour.
Step 5: Make the Alabama White Sauce
Mix all the sauce ingredients in a bowl. Refrigerate until it’s time to serve—chilling enhances the flavour.
Step 6: Rest & Serve
The chicken is ready when it reaches 75°C (165°F) internally. Let it rest for 10 minutes before slicing. Drizzle with Alabama white sauce and dig in!
