Ingredients1 shot of smoked peach syrup 1 shot of Mr. Consistent Sours Cocktail Mixer 1 cup of ice cubs 1 cup water |
Step 1: Preheat the Offset Smoker
Start by prepping your Hark Chubby Offset Smoker. Aim for a steady temperature of 121.1°C (250°F) by using a mix of charcoal and double-triple split Ironbark Firewood. This will create the perfect conditions for smoking your peaches.
Step 2: Prepare the Peaches
Take your peaches, halve them, and remove the pits. Place the peach halves flesh-side down on a tray. Smoke the peaches for about 40 minutes until they’re nicely softened and infused with that smoky flavour.
Step 3: Make the Peach Syrup
Once your peaches are smoked, slice them thinly. In a cast iron pan, combine the sliced peaches with raw sugar and water.
Now, increase the temperature of the firebox in your smoker, add the grill grates, and place the pan on top. Let it cook for 20-30 minutes, stirring occasionally, until the syrup thickens and reduces.
Step 4: Chill the Peach Syrup
After the syrup has reduced, remove the pan from the smoker and let it cool. Strain the syrup through a fine sieve into a jug and place it in the fridge for about an hour to chill.
Step 5: Prepare the Smoked Peach and Whiskey Sour
In a cocktail shaker, muddle 4-5 fresh mint leaves to release their aroma. Add 1 shot of smoked peach syrup, Mr. Consistent Sours Cocktail Mixer, and your favourite Whiskey. Add 1 cup of ice. Secure the lid on your shaker and shake vigorously for about 15-20 seconds until everything is well combined.
Step 6: Pour and Serve:
Fill a glass with ice and pour your Smoked Peach and Whiskey Sour into the glass. Garnish with a sprig of fresh mint and a slice of smoked peach for the perfect finish.
