A three hour, beginner friendly session built for after work groups and Friday night crews. No experience needed, just curiosity. You'll cover the fire management basics, then put them straight to work on steaks, wings, smoked cheeseburgers and pork belly lollipops, all cooked and eaten together in one sitting. Hosted by Ross Walker of Firehouse Barbecue at the Hark BBQ site in Dandenong South.

- Two-zone fire management, setting up direct and indirect heat for full control
- Rubs and sauces, layering flavour before, during and after the cook
- How to build and balance great flavours across a dish, from seasoning through to sauce
- Hands-on exposure to several popular smokers across every price range, including Big Green Egg, pellet smoker, offset smoker and gas smoker

Friday Night Bites is his easiest entry point into Smoke School: the fundamentals explained simply, no prior experience assumed, in a shorter, social, after work format.

Do I need any BBQ experience?
None at all. This class is designed for complete beginners. Ross breaks everything down from scratch.
What do I need to bring?
Just yourself. All meat, equipment, and smokers are provided on the night.
Is food included?
Yes, you eat everything you cook.
How many people are in each class?
Friday Night Bites runs for up to 35 guests in a social, group format.

What if I need to cancel or reschedule?
Contact us as soon as possible and we'll do our best to move you to another date.
Cancellation Policy
- If a class is moved, your booking rolls over automatically.
- If fully cancelled, you'll receive a full refund. In rare circumstances outside our control, a $25 admin fee may apply.
- Withdrawals made more than 14 business days before the class receive a full credit for another session.
- Withdrawals inside 14 business days are non-refundable and cannot be credited.
- No-shows on the day: no refund or credit can be provided.
